What is the best bait to catch sharks in NJ (See list below)?

I live in NJ and I really want to catch a shark (other than dogfish) this year from the surf. I always hear people say that I should just use bunker but the problem is that it's like telling me that if I was to go catfishing that I should use a worm. Could it work?-Yes Will it work?-1 in a million chance that it would! If you use a bait like bunker then you're just gonna catch the smaller scavengers before the big guys get a whiff of it! I'm interested in catching sand tigers mostly but I would also like to go after sand bars, bulls, blues, and pretty much any thing else that's in shallow water. Also how will I go about chumming from the beach?
